<p><strong>The Large Pepper Mill</strong><br />
One of the great things about a large pepper mill is that you can go a long time between refills so there is a rare pit-stop for peppercorns.</p>
<p>It is also a great feature of any dining area for the chef or waiter to move from guest to guest or diner to diner asking would they like more pepper!</p>

<p>Many pepper mills and grinders come in a natural wood finish but others colours, including red, are also popular and would probably be part of a dining colour scheme.</p>

They have a great hot pine flavour for the taste buds which can be used either as whole, crushed, cracked or ground in food.</p>
<p><strong>Throughout The Centuries</strong></p>
<p>The ancient Greeks used peppercorns as a currency and also as an offering to their gods.</p>
<p>A man’s wealth in the middle ages was measured by how much stock he had acclimated in peppercorns. It was weighed like gold is today and was used by Europeans for dowries, rent and taxes.</p>
<p>In the 15th century, pepper was regarded as highly important that it encouraged the spice trade which inspired the Spanish exploration. It was this exploration that eventually discovered the new world.</p>
<p><strong>Storing Peppercorns</strong></p>
<p>Black peppercorns if stored in a glass airtight container in a dark cupboard can last indefinitely unlike ground pepper which has a shelf life of about three months. Whereas ground pepper is instant, black pepper can be used freshly grounded to give a better flavour than the instant version.</p>
<p><strong>Whole Peppercorns</strong></p>
<p>Whole peppercorns should look free from blemishes and can be dropped into stews, casseroles, as well as spicy hot dishes like curry. Whole peppercorns can also be used when poaching meat, seafood or poultry to give a fuller flavour.</p>
<p><strong>Cracked Black Peppercorns</strong></p>
<p>Cracked black peppercorns that are crushed with the side of a steel kitchen knife can be rubbed onto chops and steaks before grilling.</p>
<p><strong>Using Black Pepper in Dressings, Sauces And Marinades</strong></p>
<p>When making Caesar salad dressing, sauces and marinades choose a peppermill which can grind the peppercorns coarser, this will give the dressings and marinades extra bite and texture.</p>

<p>Reading the above made me want to poach a quality free range egg and enjoy  the runny yolk &#8230; when I think back on the days when we used so much table salt, it&#8217;s a wonder we are all still here! However, a dash of good quality sea salt and a quick grind of pepper is a treat and a taste to be savoured.</p>

			<content:encoded><![CDATA[<p>Walking around the supermarket recently I noticed the pre-filled salt and pepper grinders and I was surprised at how cheap they were.
<p>It got me thinking about the need for more expensive sets and the reason why people are willing to pay more for quality and style.
<p><strong></strong>&nbsp;
<p><strong>Perhaps it boils down to horses for courses.</strong>
<p>If you prepared a quality meal that took ages to make and you had guests joining you for the evening, you would use good quality table ware and not eat off of paper plates using plastic knives and forks!
<p>I guess the same is true about salt and pepper grinders in that a quality meal would best suit a stylish grinder design. A meal when children are around would best suit novelty salt and pepper shakers and if you are eating fish and chips off of paper plates or out of newspaper, you could use the most basic salt and pepper shaker.
<p>On second thoughts, with the price of fish and chips these days, maybe the best china and a Peugeot or Cole and Mason grinder would be appropriate!

<p>Christian Stein, marketing director at Peugeot UK, said that the food festivals are intended to chime with the Motion &amp; Emotion strapline.</p>
